The 'Panelle' are flat-fried cakes made from chickpeas flour. When immersed in the hot oil, they form a bubble, a kind of folder that prevents the oil to penetrate the dough. Dusted with salt they are usually eaten in the morning. The 'Crocche', potato croquettes made all around the world but in Sicily, among the colors and the sounds of the souk, they have another charm...
The 'Arancine' which are fried ball made with saffron-flavored rice, green peas, and meat sauce. Saracen wives prepared them for their husbands' long trips and also nowadays Sicilians who emigrate also bring some with them. The 'Sfiloncello' (from Latin 'spongia' - sponge) is the name of the spongy flour dough enriched with pieces of caciocavallo cheese and covered by salted sardines, tomato sauce, onion, and olive oil.
After 4 pm you can eat the 'Stigghiola' - grilled ovine or cows entrails on the spit; the 'Caldume' - entrails and cattle trip boiled in broth
and the 'Frittole', meat leftovers fried with lard, saffron, salt and pepper, and bay leaves.
At any hour you can have the 'Pane con la milza', bread with spleen which is a dish created by Jews for the Christian fellow citizens in the II century. Actually, the killers of Kasher slaughterhouses could not have any compensation since it was not possible to pay someone for killing, even if it was about animals. So, in return for their work they received entrails that somehow they had to transform in money. So they invented a roll filled by slices of spleen and lung fried in lard and enriched with ricotta or caciocavallo cheese.
Other delicious dishes are 'Polpo bollito' (stewed octopus), 'Ricci di mare' (sea urchins)
'Zuzzu' (pork head in a gelatine coating) and the delicious 'Babbaluci', which are whitish snails seasoned with fried garlic, parsley, or a tomato sauce. To get the snail out of the shell, the locals make a small hole and then suck it out: just Sicilians are able to do it!
